
Looking for a noodle salad with an ethnic feel? This
popular pasta salad is quick and easy; adding the honey and other
ingredients in a certain order insures that the dressing will stick
well to the noodles, making for an exceptional dish. Serves 4 or so.
Ingredients:
Cook, then drain, rinsing in cold water to cool: > 8 oz. pasta
Grill in iron pan, adding some water to help carrot to cook/steam, using a touch of olive oil as well: > 1 carrot, diced > olive oil for grilling
Add cooked carrot to drained, cooled pasta. Grill peppers in hot skillet, with a splash of olive oil: > 1 red pepper > olive oil for grilling
Add grilled peppers to the pasta and carrot. Also add: > 2 pc. diced green onion > 1/4 c. sesame oil
Next, mix in: > 1/4 c. honey
Reduce in pan, by about half (mixture will get more saucy, less liquidy): > 1/4 c. white vinegar > 1/4 c. soy sauce > 1/4 tsp. cayenne
Mix all the ingredients together. When ready to serve, also add this (saving some for garnish): > 1/3 c. chopped peanuts > 1/2 bunches chopped cilantro
