  • Butternut Squash, Mashed, made healthy, easy and flavorful by using fresh-baked squash, adding frozen apple juice concentrate instead of sugar.
  • Chicken Stock, just using what might get thrown away- save money by cooking up the carcass after roasting chicken for other recipes!
  • Eggplant Recipe, a simple way to cook up eggplant; tender, silky texture. A great addition to salads, sandwiches
  • Hollandaise Sauce, a revised version, using the microwave to heat lemon juice first, which helps yolks to get a head-start cooking. Even works w/ olive oil in place of the butter; a heart-healthy recipe indeed!
  • Jell-O, Natural Style, using frozen 100% fruit juice concentrates instead of the typical artificially flavored and sugar-sweetened jello fare. Hints for using agar-agar (a vegetarian substitute for gelatin), too.
  • Lemon Caper Sauce, a perfect accompaniment for fish dinners; good on roast beef or tuna sandwiches, too. Tips for making a sauce "concentrate", which will keep for months in the refrigerator. (Just add fresh garlic, lemon, and green onion when serving, to keep it fresh.)
  • Polenta, easiest method: Mix boiling water into corn meal, microwaving or baking. Less stirring! Turns out creamy, soft, so flavorful.
  • Sweet Potato Casserole, similar to the classic Thanksgiving casserole, but healthier without the canned yams and marshmallows. A nutty streusel topping makes it extra tasty.
  • Stuffing Recipe, w/ fresh herbs, and celery and onion sauteed in butter first. Easy to make; oh-so-good!
  • Veggie Kabobs, a simple recipe: Marinate veggies in an easy oil-vinegar mix first. Serve w/ ginger sauce.
