Fudge- Healthy Style



 

This "fudge" is soft, but the dehydrator worked perfectly to dry out slices of this into fudge-like "cookies". Makes 1 to 1 1/2 pints. 

Ingredients:

  • 1 c. cacao nibs
  • 1/2 c. hot water
  • 1/4 c. coconut cream concentrate, melted, or 1/2 c. pieces (.13 lb.) (from Tropical Traditions, or substitute organic coconut oil from health food store)
  • 2 TBS. olive oil
  • 3 TBS. butter, melted
  • 1 c. medjool dates, pitted
  • 1/4 c. honey (.18 lb.)
  • 1/2 c. walnuts or pecans, if desired


Let cacao nibs soften 8 hours or so, in the hot water: > 1 c. cacao nibs > 1/2 c. hot water

Warm the coconut cream concentrate to melt it. Add that, plus all ingredients except the nuts, to a food processor or blender; process until smooth. Hand stir the nuts in, spread into tiny loaf pan. Refrigerate. Mixture will firm up some; you can then cut it into 1/2 " slices to dehydrate, if desired. Or eat as is, or add to oatmeal... Perfect to snack on when everyone else is pulling out the junk food!
