Easy Recipes
Part of the trick to having easy recipes is: Know the shortcuts! Need grated cheese? Try getting sliced Cheddar from the deli counter. Chop through the pile of it, cutting it into short, thin strips. The cheese gets "grated" enough to use in this recipe (and many others that might call for "grated").
Already-grated cheese sold at the grocery store is a time saver, but it costs more. It's often lower quality and less fresh than from the deli counter, too.
Another tip I use in recipes calling for orange zest: I peel the outer skin of the orange as in peeling an apple, and process the peel. Much easier than grating! When I have a lot of baking to do, I've processed extra, storing it in the freezer for upcoming recipes.
Cranberries, cheddar cheese, nuts, and orange zest make this bread a favorite in our house. From an old Betty Crocker cookbook, with just a few changes. Toast slices for an extra treat at breakfast, just like fresh out
of the oven. Makes 1- 9x5" loaf, or 2- 8 1/2 "x 4 1/2 " loaves, or 3- 5x3" loaves.
Ingredients:
Prep the following, setting aside: > 1 c. chopped nuts > 1 1/2 c. grated cheddar cheese > 1 1/3 c. cranberries, cut in half or chopped coarsely > 1 1/2 TBS. grated orange peel
In a large bowl, mix dry ingredients together: > 2 1/2 c. flour > 1/2 c. sugar > 3 1/2 tsp. baking powder > 1 tsp. salt
To the dry ingredients, add the nuts, cheese, cranberries, and orange peel, plus: > scant 1/4 c. olive oil > 1 c. milk > 1 egg > 1/4 c. frozen orange juice concentrate
Stir all ingredients together lightly, barely mixing it smooth. Pour into greased loaf pan/ pans, using butter to well-grease the bottom only. Bake a big loaf at 350 degrees for 60 to 70 minutes, until toothpick inserted in center comes out "clean". Smaller loaves will cook quicker, 40-50 min.
