Best Chocolate Mousse Recipe

I compiled this recipe using the best features of several recipes.
The gelatin helps the mousse maintain the right consistency, and simple
ingredients make it an easy recipe to pull together. Makes 10 servings.
Ingredients
- 1/2 pkg. gelatin (1 1/4 tsp.)
- 2 TBS. cold water
- rounded 3/4 c. chocolate chips
- 2 TBS. butter
- 2 TBS. vanilla
- 1 c. heavy cream
- 3 eggs, separated
- 1 TBS. sugar
Soften gelatin in the cold water, sprinkling the gelatin across the surface of the water in a small bowl: > 1/2 pkg. gelatin (1 1/4 tsp.) > 2 TBS. cold water
Microwave: > Softened gelatin
Also microwave: > rounded 3/4 c. chocolate chips > 2 TBS. butter
Mix together: > the microwaved gelatin > the melted chocolate/butter > 2 TBS. vanilla
Chocolate mixture will need to be just warm, to mix egg yolks in. (Keep in warm place, if necessary.) Meanwhile, whip cream: > 1 c. cream
Chill cream. Whip whites until frothy: > 3 egg whites
Add to frothy whites, beating until glossy: > 1 TBS. sugar
Into the warm chocolate mixture (not too hot, but warm), mix in, one at a time: > 3 egg yolks
Fold into the chocolate mixture: > a third of the whipped cream
Then fold in: > half of the whipped whites
Finally, fold in remaining whipped cream and whites. Use pastry bag to squeeze into containers (or dollop by the spoonful), into 10 dishes or baking cup liners. Garnish with triangular cooker or other wafer, and maraschino cherry if desired.
