Carrot Cake Recipe- Honey Sweetened

This healthy recipe for carrot cake uses honey for sweetening The olive oil in the cake batter makes it especially moist; the carrots make it healthy. A classic cream cheese frosting is quick to whip up- such a treat! 


Ingredients:     
  • 1 1/4 c. plus 2 TBS. all-purpose flour (or substitute 1 1/2 c. whole wheat flour)    
  • 1 tsp. baking soda    
  • 1 tsp. salt    
  • 1 c. olive oil    
  • 1 1/3 c. honey    
  • 4 eggs, room temperature    
  • 1 1/3 c. dates (or substitute 1 c. raisins)    
  • 1 1/2 c. walnuts    
  • 1 1/4 lb. carrots (about 4 medium)    
  • 1 lb. confectioner's sugar    
  • 1 stick (1/2 c.) butter, room temperature    
  • 7 TBS. cream cheese, room temperature (that's one 8-oz. cube, minus 1 TBS.)    
  • 1 tsp. vanilla  

Prepare 2- 9" or 3- 8" round cake pans (or use a 13x9" rectangle pan), by oiling and flouring. 

Measure out the flour and set aside: > 1 1/4 c. plus 2 TBS. all-purpose flour (or substitute 1 1/2 c. whole wheat flour) 

Measure and set aside: > 1 tsp. salt > 1 tsp. baking soda  Measure the following ingredients into mixing bowl and mix until blended: > 1 c. olive oil > 1 1/3 c. honey > 1 1/3 c. dates > 1 1/4 lb. carrots, grated (about 4 medium) > 4 eggs 

To the above ingredients, mix in: > The 1 tsp. salt and baking soda 

Last, mix in the flour, just until blended: >
1 1/4 c. plus 2 TBS. all-purpose flour

Pour into prepared cake pans. Bake at 350 degrees, until golden, and toothpick in center comes out clean. For 3 round cake pans, bake about 35 minutes; for 2- 9" round pans (or a 13x9" rectangle), bake about 45 minutes. 

Cream Cheese Frosting Recipe 

Frost the cake when cooled. Beat the following in mixer until creamy: > 1 lb. confectioner's sugar > 1 stick (1/2 c.) butter, room temperature > 7 TBS. cream cheese, room temperature > 1 tsp. vanilla
