Super Foods

All the facts point to how very health-promoting raw cacao nibs are, so I soon found some online suppliers for cacao nibs (Sunfood Nutrition is a good source). Next question was, how to make a tasty treat out of them. The rest of the family didn't like them plain, but they did like the Coconut Bark, so I consider the recipe a success.

Coconut Oil

Coconut oil is great for cooking, as it can take the heat well for stir-fries and the like. It's very stable, lasting over a year at room temperature without going rancid. It's also good for the metabolism, and for fighting off viruses. One time, I substituted a good quality organic virgin coconut oil for the coconut cream, in the Coconut Bark recipe; it still turned out pretty good, although I do prefer the Coconut Cream Concentrate.

Coconut Cream:                                 A Recipe for Coconut Bark

Order a great product, "Coconut Cream Concentrate", from Tropical Traditions, and add plenty of flavor to smoothies, rice dishes, and sauces.

Unlike coconut oil, coconut cream will need to be refrigerated. The bark itself should also been refrigerated in warmer weather. "Personalize" this recipe, adding more or less of the ingredients, according to personal tastes.

This in one of those healthy recipes full of raw, natural ingredients. File it under quick and easy recipes, too- it's so simple! Makes one loaf, good for quite a few snacks.

Ingredients:

  • 1 c. coconut cream concentrate
  • 1 c. dates, pitted (Medjool if available)
  • 1 c. macadamia (or substitute pecans or walnuts)
  • 1 c. cacao nibs
  • 1 c. raisins (or substitute dried cranberries or other favorite dried fruit)
  • Optional: 1 c. pumpkin seeds

Melt coconut cream concentrate, setting the jar in a pot of simmering water (with a rag at the bottom of the pot to keep the jar from breaking): > 1 c. coconut cream concentrate

In separate bowl, add the following: > Dates > Nuts > Cacao nibs > Dried Fruits, etc.

Add the melted coconut cream to bowl of ingredients, mixing well. Press the mix into a loaf pan, chilling until firm.

Run hot water over the loaf pan (held upside-down) to get the coconut bark back out, and slice it up. It's a perfect between-meal snack.
