Next question was, how to make a tasty treat out of them. The rest of the family didn't like them plain, but they did like the Coconut Bark, so I consider the recipe a success.

Coconut Oil
Coconut oil is great for cooking, as it can take the heat well for stir-fries and the like. It's very stable, lasting over a year at room temperature without going rancid. It's also good for the metabolism, and for fighting off viruses. One time, I substituted a good quality organic virgin coconut oil for the coconut cream, in the Coconut Bark recipe; it still turned out pretty good, although I do prefer the Coconut Cream Concentrate.
Order a great product, "Coconut Cream Concentrate", from Tropical Traditions, and add plenty of flavor to smoothies, rice dishes, and sauces.
Unlike coconut oil, coconut cream will need to be refrigerated. The bark itself should also been refrigerated in warmer weather. "Personalize" this recipe, adding more or less of the ingredients, according to personal tastes.
