March will be a big month for me, with Easter
Sunday on the 23rd, and my fiftieth birthday the next day. We'll just
have to celebrate, though a birthday cake for me will take second fiddle
to my grandson's Easter egg hunt. At age two last year, Easter really
impacted him; plastic eggs full of candies and toys hiding in Grandma's
garden is a dream come true for toddlers, right? By this year, he fully
anticipates another exciting hunt, and I'll have to ensure we can live
up to the expectations. Before long, those egg hunts lose some of their
appeal; we get older and realize we can buy our own candies at the
store. We discover the extra cost as well, as our sugar high fizzles
into a low blood sugar slump. Best to relive the joy vicariously, in the
expressions of young, little faces that can weather it better.
With
all the excitement of Easter, celebrating that special day with our
friends at church, we will no doubt arrive home somewhat famished. A
quick, easy meal will be a plus, and I'll pull out a few reliable
recipes to fit the occasion. One objective: To have enough healthy foods
ready to go before we ruin our appetites with chocolate eggs! I love
the frittata recipe I've used over the years. Depending on our mood, we
might have the Spinach Frittata, or the zippy Green Chile Frittata, or
the tangy one using artichoke hearts. For a big group, I might make a
variety. The recipe is pretty fool-proof, with a bit of flour helping
the dish to set up well, making it easier to cut and serve. It is
delicious served warm or at room temperature, and makes a fine
appetizer, cut into smaller pieces. The mother in me is happy, too;
everyone's getting their protein.
With a half a century almost
behind me, I want to remember the important things. We do need to be
fed, but having time to spend visiting is a priority. Our granddaughter
may start walking any day now, and I don't want to be so caught up in an
overly-ambitious kitchen routine that I miss it! To gather with friends
and family, celebrating the life we've been so graciously given, is
indeed a priority. It's a blessing to enjoy our kids and grandkids, and
remind ourselves of how quickly time can pass. All of us "older" people
were once young ourselves, and know all too well, we must take it all in
before it's gone.

Easter this month, we remember: Christ died on the
